Even though it’s been a very long day… I feel like baking. This cake is so easy and delicious as well as a childhood favorite. I can see my mom baking this cake for our weekend… We always needed to be prepared for company!!

3 cups of all-purpose flour
2 1/2 cups of granulated sugar
4 large eggs at room temperature and separated
1 cup of warm water
1/4 teaspoon of salt
2 teaspoons of baking powder
Zest of 1 lemon

I use a 10″ Angel Food Cake pan from Nordic. It’s heavy weight, so it will last you, and it has a non-stick finish.

Instructions

Preheat oven to 350 F
Grease and flour tube pan and leave aside.
In a medium bowl, whisk together the flour with salt and baking powder and leave aside. Separate the eggs into two medium bowls.

Using a hand mixer at high speed beat the egg whites until they form high peaks and then leave aside. In the other medium bowl with the egg yolks using the hand mixer beat them together with sugar and water, and then add the flour mixture a little at a time into the bowl and well beat together.  Next step is using a wooden spoon, mix in the lemon zest, and then fold in the egg whites.  Pour mixture into the greased and floured tube pan, and bake for 60 minutes or until inserted toothpick comes out clean.
