Tuna and Macaroni: a quick dish to make and sooo comforting!
My mother loved to make this dish for my father! I know, macaroni may make it seem non-traditional but my dad loved his macaroni and wanted it included in all his soups and stews and whatever else my mom was making. Honestly, adding pasta makes this very hardy and filling: the perfect comfort food!
We love to eat this with a salad, and I love making this in the summer so I can use fresh parsley and tomatoes. You can make it any time of year with fresh or canned or jarred, it doesn’t matter. It’s just so easy to make and so satisfying!
Serves 2-3 people
- 1 5 ounce can of Tuna -drained!
- 3 garlic cloves, diced
- 1 Medium onion, diced
- 1 cup of dry macaroni, cooked
- ½ cup of parsley, chopped
- 2 cups of cherry tomatoes, halved
- Olive oil
Heat oil in the pan first, then saute the onions until translucent.
Add the tomato pulp, stir and let it come to a simmer, then add garlic and tuna; mix together in pan. Let it simmer a few minutes, then add all the tomatoes and half the parsley.
Move the mixture into a serving bowl, then sprinkle the remaining parsley over the top.
