With strawberries being one of the juiciest and most popular berries, I plan on using them to bake lots of goodies… Starting with this recipe for strawberry scones!! You can use other berries or fruits as well, of course. For example, blueberries or raspberries would also be delicious substitutes.

2 large eggs, lightly beaten
1/3 cup of heavy cream
1/2 cup of fresh strawberries, chopped
8 tablespoons of cold salted butter, cut into small pieces
2 cups of all purpose flour
5 tablespoons of sugar
1 tablespoon of baking powder
1/4 teaspoon of salt
2 tablespoons of heavy cream for brushing
3 tablespoons of sugar for sprinkling
Preheat oven at 400 F
Line baking sheet with parchment paper and leave aside.
In a large bowl, combine the flour, sugar, baking powder, and salt. Add the small pieces of cold butter and with your fingertips, rub and pinch the butter into the flour mixture, until the mixture looks like course sand. Next add the eggs and heavy cream, and stir until it forms a soft dough. Then gently stir in the chopped strawberries.
Then place the dough onto a floured surface and with your hands, form a nice ball and then pat the dough down to about a 1 inch thick rectangle. Cut into 8 triangle scones.. you don’t need to be perfect… they will taste wonderful even if there not a perfect triangle!! Brush the tops with heavy cream and sprinkle with sugar. Bake until a deep golden color about 20+/- minutes. It’s best to serve warm with butter and some jam… strawberry jam for us!!
