Apple Walnut Cake / Bolo de Maçã e Nozes

In my home growing up nothing went to waste, so if we had extra apples my mom would bake this cake for us. We would enjoy this delicious cake throughout the year, even though it is the perfect autumn cake to have!! Enjoy!!!

6-7 medium apples, I used Gala Apples, but you can use the
apple of your choice.
Make sure to peel, core and cut apples into small bite size pieces.

½ cup of granulated sugar

1 tablespoon of cinnamon

1 cup of chopped walnuts

2 ¾ cups of all-purpose flour

1 tablespoon of baking powder

1 teaspoon of salt

1 cup of butter, melted or 1 cup of vegetable oil

1¾ cups of granulated sugar

5 large eggs or 4 extra large

¼ cup of orange juice

2 teaspoons of vanilla

Preheat oven at 350 degrees F.
Grease and flour a large tube or bunt pan and leave aside.
In a large bowl add the chopped apples and toss together with sugar, cinnamon and walnuts. Making sure that all apples are covered with mixture, then set aside.
In another large bowl add the flour, baking powder and salt. Mix well together and leave aside.
In a separate medium bowl mix together using a hand mixer the eggs, sugar, orange juice, butter and vanilla. Mix everything together until well incorporated. Then finally create a well at the bottom of the flour bowl and add all of the egg mixture. Mix everything well together. Then Pour half of the mixture into the pan and spread half of the apple mixture over it. Then pour the remaining batter over the apples and then top with the remaining apple mixture on top.
Bake for 1 hour and 20 minutes, or until inserted toothpick comes out clean.
Let the pan cool before removing, and serve along with a nice cup of coffee or tea.
